On the big day of festivities that Valborg is in Lund, many like to kick-start the day with a nice brunch together with friends. However, no matter how delicious brunches are, they sometimes tend to be the same old. Why not dig into various options in revamping the brunch a notch? So here, my ladies and gents, I compiled a little list of various options you may prepare for your brunch on this year’s Valborg.
Bagel brunch
Salmon and cream cheese, eggs and bacon or for the adventurous bagel folks, perhaps some goat cheese, honey and fruit. You name it, the possibilities are endless. From classic combinations to bold flavor experiments. First, you start with your ‘schmear’ – the spread that sets the stage for the rest. Basics like cream cheese, hummus or jam, peanut butter, and ricotta are nice choices. For the savory toppings, an array of cold cuts, salmon, eggs, cheese and veggies such as tomatoes, radishes, avocado, capers and sliced onions offer endless options. Whereas, for the sweet teeth, a variety of fruits make great bagel toppers. It’s hard to not please anybody’s palette with this brunch concept.
Focaccia
Feeling a bit more fancy? You can’t have missed the delicious focaccia sandwiches on TikTok with various cold cuts, cheese and leafy greens. Prepare some focaccia bread beforehand and make delicious sandwiches out of it. If you’re a big group this might be a nice option to do in a sheet pan and serve with various delicious fillings and snacks on the side.
Sandwich Station
Prepare boards with various cold cuts (like turkey, ham, roast beef), an array of fresh veggies, cheeses, hummus, halloumi and other preferred toppings such as pickles, olives, or peppers for the ultimate sandwich. Include a selection of different bread options such as french rolls, baguettes or any other favorites, and be sure to not forget the sauces and spreads! Then everyone can assemble their own ultimate sandwich. Perhaps you may go for a Bánh Mì, The Reuben or your favorite Subway sandwich?
Breakfast Tarts
Using puff pastry as the base for tarts opens up a world of culinary possibilities, much like making homestyle pizza. It’s a quick and versatile way to create delicious treats with a variety of toppings. My favorites’ and perhaps also the most common combinations, are goat cheese paired with pears, leek and olives, and the classic combination of juicy tomatoes and tangy feta cheese. However, the beauty of making tarts is that you can customize them to your taste preferences, experimenting with different ingredients and flavor combinations until you find your perfect match. Whether you prefer savory, sweet, or a combination of both, the options are endless when it comes to creating puff pastry tarts tailored to your palate.
Waffles/pancakes/french toast
Make them sweet loaded with fresh fruits, jam, berries, chocolate and more. If the group has any team savory, perhaps spinach and cheese or eggs and ham are the way to go? Whether you’re leaning towards sweet or savory, the possibilities with waffles, pancakes, and french toast are endless, ensuring that there’s something to satisfy every craving within the group.
Smörgåstårta
For those who want to be more classy and can’t get enough of the Swedish Smörgåstårta, this might be an option. I’m not the biggest fan of the smörgåstårta myself, but naturally there are multiple different versions in which you can make them. Ranging from more italian flavors to seafood based one.
Potluck
Finally of course a nice way is to simply do the traditional potluck. Make everyone bring a tray of various charcuterie, fruits, baked goods and more. A nice way to surprise each other with different delicious goodies.
Brunch is just one very nice way to kick-start and prepare you for the long day that Valborg is. Whether you indulge in savory dishes or sweet treats, brunch sets the tone for a day filled with celebration and festivities.
